Meaty Minestrone Soup
Brown 1 lb ground beef ( I use elk) with 1 onion.
While meat is browning, in a very large saucepan combine
4-6 cups of water, a 28-oz can of crushed tomatoes - I use 2 quarts of home canned tomatoes and if more liquid is needed add my secret ingredient…. chicken broth. It adds so much flavor and is incredibly good for you! (yep homemade, another post for later)
1/4 cup each
ð green split peas
ð lentils
ð barley
Add 2 chopped carrots and 2 to 4 chopped potatoes. (I like these with the skins)
1/3 cup beef bouillon powder
2 Tbsp. parsley flakes
1/3 tsp. thyme
1 tsp. basil
1/3 tsp. pepper
optional ingredients to add are 1-2 cups shredded cabbage or 1/4 cup alphabet macaroni.
Add browned meat and onions. Simmer 1 hour or until veggies are tender.
I like to prepare this all in the morning and simmer all day in the crock pot. Makes your house smell wonderful! Plus gives you time to make homemade rolls to go with it or fresh cornbread. Can also be served with cheese and crackers.
Yummy! and filling. an important factor with a house full of boys.
