I’m SO glad I found your website! I’ve been dehydrating and freezing for years, but was always afraid of canning. I’ve always been a “from scratch” person, and I’ve been making my own bread, grinding my own flours, and flaking our cereals for years. Now I’ve decded it’s time to take the next step . . . and finally start canning! I haven’t done anything yet, but am so anxious to get started. And it’s so great to find you’re in Colorado, too! Where do you guys live? We’re in Arvada (Denver area) now, but Lord-willing will be able to move up to Wellington where my family is in the not-to-distant future. Thanks for the work you’re doing to help us “canning dummies”!

I wanted to see if you could answer a question for me. I am doing mission work in Nicaragua. I will be sharing with them how to preserve corn. Do you know how many ears of corn you can fit into a canning jar. I am trying to estimate how many jars I will need. Thank you for taking time out to help.

Patricia, I’ve never measured it before. I just keep canning until I have what I want. :0) I just checked my old Ball Blue book and it states that you’ll need 3 to 6 ears per quart. That is quite a range. I’m sure it all depends on the size of your ears. I hope this helps!

My daughter is doing a science fair project on the correlation between skin color of apples to the applesauce color. We would like to use your website, but aren’t able to find any dates for documentation. Would you know the dates that you posted about the 3 different jars of applesauce.. canning apples and applesauce? This is EXACTLY what we need. Thanks so much

Thank you for your wonderful websites and the work that goes into making them so intriguing. I just started canning last week – started with chicken thighs and legs just in case it didn’t take. My husband just had to try them. I made him wait a few days to make sure they were “good.” They were. He loved them. Today made 5 quarts of chicken soup. Even more amazing considering my 10-month old grandson was with me all day. Anxious to try them and planning out next year’s growing season! Appreciate you making this not a chore, but a blessing of fun.

I just watched the video you posted on Simply Canning from the preparedness expo. I saw that you use the Volcano Cooker so you can do your canning outside. Just curious as to which one you use. I’ve been looking for an outdoor cooker that I can use my canner on too, and want to be sure it can support the weight of a full canner. It looks to be just what I’ve been looking for. Thanks!
Hi Trudi, yes I do use the Volcano Grill for canning. I’ve used it with both waterbath and pressure canning. That is one of the features that I especially liked about the Volcano. It has a nice wide base and seems very secure. Obviously you’d need to have it on a sturdy table or on the ground.
You’ll also want the propane attachment. It would be difficult to adjust and manage the flame of a wood or charcoal heat source.
